I started up Friday Next Café with zero experience in hospitality and managed it from day one. This phase of my life is also known as “how I got into advertising” which was achieved by dishing out free coffee to famous people.

My (self-selected) title of General Manager meant that I did things such as:
- Created, designed and priced the menu
- Quickly learned how to actually make food – turns out the best way to cook eggs is not in the microwave (thanks Mum)
- Managed sales and profit targets, reporting directly to the owners
- Hired suppliers and hired/trained staff
- Lead the catering for a variety of events on and off site
- Facilitated staff development through groundbreaking “employee of the month” and “dud of the month” awards. Unfortunately the dud of the month award was quickly terminated after I received it for numerous months in a row
